Meet Your Captain: Lennox Maximo, a.k.a. “Big Grouper”
Our day began early on the coast of Hopkins Village, where the Caribbean breeze met the rising sun, painting the sky in hues of orange and pink. We met our captain; my uncle, Lennox Maximo, fondly known as Big Grouper. A seasoned fisherman with decades of experience, he carries with him traditional fishing knowledge passed down through generations.
After a warm welcome, a quick safety briefing, and a rundown of the day’s plan, we boarded his fishing boat and set off into the calm, turquoise waters of the Caribbean Sea.

What we caught
Our first stop was near the mangroves to catch bait. My uncle, a master of the cast net, scanned the water, tossed the net once—and just like that, we had more than enough sardines to begin the real fishing.
Next, we cruised toward his favorite fishing spots. With bait prepped and lines ready—some using hand lines, others with rods—we cast out into the deep. The excitement quickly built as the first line tugged and someone reeled in a beautiful red snapper.

With our cooler full of fresh fish, we made our way to Bread and Butter Caye—a small, rustic island paradise perfect for the next part of the adventure.

We sat in the shade, listened to the waves, and enjoyed our freshly prepared lunch with smiles on our faces and the ocean breeze in our hair. After eating, we lounged in hammocks, shared stories, and took in the peacefulness of the island.

As the sun dipped lower in the sky, we headed back to Hopkins Village—our bellies full, our hearts content, and our minds brimming with memories.
